Peel pears and make 1/4 inch slices. Place in a bowl and mix with lemon juice, cornstarch, sugar and cinnamon.
Mix pie crust ingredients in a Cuisinart adding the cold water last.
Roll pie crust dough btwn saran wrap to make 6 inch circle, might look more oblong and that is ok
Place crust on parchment paper on a cookie sheet
Pile pear mixture in the middle leaving an inch around the edge to fold in.
Fold edge in (if crust breaks just put back together like play dough)
Bake at 425 for 15 minutes
Reduce heat to 350 and continue baking till crust in browned and pears are soft (approximately 45 more minutes)
Prepare glaze by mixing the honey and the hot water
Brush the edges of the crust and on top with the glaze and bake 5 more minutes
Cool before cutting about 1/2 hour
