Super Yummy Gluten Free Chocolate Cupcakes with Cream Cheese Frosting

Ingredients

  • 1 cup Outrageous Baking All Purpose Gluten Free Flour
  • 1 cup granulated sugar
  • 1/2 cup cocoa
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon espresso powder or 1 teaspoon of Coffee Extract
  • 1/2 cup milk can use any kind of milk
  • 1/4 cup coconut oil avocado oil, sunflower oil, or an oil of your choice
  • 1 large egg
  • 1/2 teaspoon vanilla
  • 1/2 cup boiling water

  • Cream Cheese Frosting
  • 1/2 cup butter softened
  • 8 ounces cream cheese
  • 4 cups confectioners' sugar
  • 2 teaspoons vanilla extract

Instructions

  • Preheat oven to 325 degrees F.
  • Place Cupcake liners in muffin tins.
  • Add all dry ingredients into a large bowl and combine.
  • Add milk, oil, eggs, vanilla, and coffee extract if using instead of espresso powder, to the flour mixture and mix together on medium speed until well combined.
  • Reduce speed to low and add boiling water.
  • Beat on high for 1 minute to air out the batter.
  • Scoop batter into cupcake liners, each should be half full.
  • Put in oven for about 20 minutes or until a toothpick comes out of the center clean.
  • Cool and frost.

Cream Cheese Frosting Directions

  • Beat softened butter and cream cheese until well blended.
  • Add powdered sugar and vanilla and beat until creamy.
