1/2teaspoonespresso powder or 1 teaspoon of Coffee Extract
1/2cupmilkcan use any kind of milk
1/4cupcoconut oilavocado oil, sunflower oil, or an oil of your choice
1large egg
1/2teaspoonvanilla
1/2cupboiling water

8ouncescream cheese
4cupsconfectioners' sugar
2teaspoonsvanilla extract
Instructions
Preheat oven to 325 degrees F.
Place Cupcake liners in muffin tins.
Add all dry ingredients into a large bowl and combine.
Add milk, oil, eggs, vanilla, and coffee extract if using instead of espresso powder, to the flour mixture and mix together on medium speed until well combined.
Reduce speed to low and add boiling water.
Beat on high for 1 minute to air out the batter.
Scoop batter into cupcake liners, each should be half full.
Put in oven for about 20 minutes or until a toothpick comes out of the center clean.
Cool and frost.
Cream Cheese Frosting Directions
Beat softened butter and cream cheese until well blended.
Add powdered sugar and vanilla and beat until creamy.
